Jalapeno Ranch Potato Salad

While Rusted Truck Ranch puts a great deal of focus on the main course for our backyard experience, you can’t truly serve a great meal without the help of an equally strong side dish. Below is my twist on potato salad.

Ingredients you will need:
Ranch Dressing
Jalapeno Powder
Red potatoes
Bacon Bits
Cheddar Cheese
Green Onions

Step 1 – Cook the potatoes

Bring a pot of water to a boil
Add kosher salt and 5lbs of unpeeled red potatoes
Cook until potatoes are fork tender (15 to 20 minutes)
Strain water from potatoes and put potatoes in refrigerator to cool

Step 2 – Make the Jalapeno Ranch

Put 2 cups of ranch dressing in a mixing bowl
Add 2 1/2 teaspoons of Jalapeno Powder and MIX WELL. You don’t want to surprise a guest with a clump of jalapeno powder

Step 3 – Slice, Mix and Garnish

Slice potatoes in quarter inch pieces, and chop a 1/4 cup of green onions

 

Add the ranch dressing mix to the potatoes and stir
Place mixture in aluminum 12″×10″ aluminum pan

Sprinkle the top with:
1/2 cup fresh bacon bits
1/2 cup shredded cheddar cheese
Chopped green onions

Feeds about 16 people
